london diaries | moving house and anxiety blips |

Let’s start with the slightly more positive half of this blog… I’VE MOVED HOUSE!! And it is honestly a dream. It’s like a slightly smaller Barbie’s Dream House. My 2 housemates will also agree with me.

TRUST – its the kitchen. My new housemates Alice (will explain more about how she popped back into my lyf in a sec) and Mary also love it. We have spent all our spare time just downstairs in the kitchen. It might be slightly further out than I used to be but it’s worth it for the kitchen alone.

I’ve also been super lucky with price and stoof. It’s a steal – just like my old place. BUT the perk of the new house is that it doesn’t come with a (to put it lightly) less than ideal housemate. Friends who I have explained my previous situation to have been shocked – I won’t reveal on here as I’m not about that (Y). I’m not one call out other peoples faults over the internet but I am just so glad I’m out of there, in my new Barbie Dream house (any applications for a Ken would be greeted with open arms and immediately considered).

So it’s so lovely that Alice is now living with us! We were at uni together but we never really hung out… guess our friendship groups just worked out like that but we were always friendly. ANYWAY, long story short, she saw I was looking for a new housemate on Facebook and here we are :) Gotta love the power of the internet.

One more positive thing that has happened is that the fam and I went to see England v. Wales Six Nations match and it was the most stressful 80 minutes of my entire life. I honestly didn’t realise how into it I’d get! I was screaming, swearing, yelling, jumping out my seat and just generally being a hooligan… it was great haha! My dad was also swearing when England did something stupid… and my dad NEVER swears, so they must have been playing so badly. But luckily they pulled it out the bag in the last 10 mins and won and the tri was scored in the corner we were sitting which was insanneeeee!

Now… something slightly less positive but hey ho, lifes life is that I have had a couple of anxiety blips recently. Usually they come about when something in my general life isn’t going as well as it could – but I usually don’t even realise until the anxiety kicks in. I know that is probably how a lot of peoples anxiety sets in but no one can ever completely know the extent of another persons mind… who knowsss. Anyway, my bezzie m8 Beth and my mumma have been actual angels talking me through my nutcase phase(s) coz sometimes, that’s what you need to do – talk it all through, get it all out to try and unscramble your mind – it works for me :). Anyway, hopefully I’m over the hump of it but nothing happens over night.

Anyone who does struggle and suffer with anxiety – please know that it’s totally normal to have blips and slips in the road to overcoming it. I sometimes have to remind myself of that too! I’m not superhuman – I’m a regular gal with regular problems who happens to have anxiety like millions of other people. I, and you, if this applies, are totally normal and totally fine.

Anyway – it’s taken me so long to write this as I kept getting distracted by YouTube videos but I have started a new insta account for all of the vegan food/products I eat/find… go give me a follow at vegan__megan :)

vegan baking | chickpea and peanut butter cookies |

Hey friends, thought it was about time to stop just taking pictures of my food and actually show you guys how you can make it yourselves (if thats something you wish to do).

All the recipes I will be sharing have been adopted from ones I’ve mostly found online or in various books. I tend to change up the ingredients due to either not having them or personal preference :)

Today I wanna show you guys these GLORIOUS chickpea cookies. Now, I know what you’re thinking… Meg. Chickpeas… in a cookie? Trust me, they taste delicious (I’ve had many rave reviews!)

I found this recipe scrolling through insta and it’s via @plasticfitness if you fancy checking her out (Y)

Now, you’ll neeeeed:

  • Chickpeas – To make around 16-20 I use around a tin and half
  • Agave nectar – You can just use honey but vegans say no to honey (plus argave nectar is a much healthier alternative to all sugar in any baking you may wanna do!!)
  • Peanut butter – around 4 table spoons
  • Dark chocolate chips – 200g or however much you like really… the chocolatier the better!
  • Baking powder – 1 teaspoon
  • Vanilla extract – a few blobs hehe
  • Vegan white chocolate – to swirl prettily on the top

Obviously if you don’t want to make these vegan then feel free to use honey, normal milk chocolate and regular white chocolate (but come on guys – you can start doing your bit for the planet by eating cookies?! I think that’s a pretty good excuse, not that you need one.)

  1. SO. Start by draining your chickpeas from the tin (if they were already in water) – you then want to soak them in warm water to soften for around an hour (I got super impatient and only ended up doing it for 30 mins but the longer the better in this case)
  2. Actually, also don’t forget to turn your oven on to 220 degrees (it’s an easy thing to forget haha)
  3. Once soaked, drain again and place into a large mixing bowl. Using either a fork or a hand blender (use this is way easier haha) just blend them up until smooth-ish (don’t worry if they’re slightly bumpy as it adds to the final texture of the cookie)
  4. Once blended, start adding your peanut butter bit by bit, mixing as ya go (Feel free to use the hand blender again as this will make a creamier mixture.)
  5. When you’ve added all the peanut butter, add the vanilla essence, agave nectar and baking powder, mixing all the time to make sure it’s all spread out evenly.(If you want them slightly sweeter which I usually do, add in more agave nectar)
  6. Thennnn, add the chocolate chips! If you cant get your hands on chocolate chips you can just finely chop a bar of dark chocolate (Bourneville is my personal fave!)
  7. Next, spoon the mixture in golf ball sized lumps onto a baking tray (lined with parchment), pressing so they’re cookie shaped.
  8. Pop them in the oven for around 15-20mins, checking on them every now and again.
  9. When they come out they will still be slightly squishy – fear not! They’ll harden as they cool.
  10. While cooling, break up the white chocolate into a heat-proof bowl and place over a saucepan of boiling water. Melt the chocolate ready to decorate the cookies!
  11. Finally, once completely cooled (impatient me again didn’t wait completely) swirl, using a fork, the white chocolate artistically (lol) over the cookies!

VOILA!!

Honestly, theyre so so super yummy!

Let’s try again – 2000 and whatever

Anyone else feel like they need another Christmas? I don’t go back to work until Thursday and the thought of that is already too much to comprehend right now.

I write this from bed, in my parents house, poorly :(. What are the chances that when I take time off I miraculously end up ill – I would say karmas a bitch but I don’t think I’ve done anything to deserve said karma (unless the constant alcohol and junk food consumption over the past 2 weeks counts… then fair enough) 

I haven’t written anything for a while (soz). I’ve wanted to! I’ve had loads of ideas that I’m going to attempt to get at least all started today and then schedule them (see that 2017 organisational bug has clearly infected me also). I also have a  load of other stuff I want to do – so I’m very grateful for a couple of extra days off.

The first of these I have semi-started this morning. 

Freelancing.

I’ve been trawling through google searches trying to work out how to become a successful freelancer and have actually come across a pretty helpful one which suggests ‘Cold-Pitching’. Intrigued? I was… it basically requires you emailing smaller websites who may or may not be completely social media savvy to offer your services.

Now… social media is my second language, not only with my social life but a large chunk of my uni education was focused on how social media can be used to help businesses… I was even a Social Media and Digital Marketint Intern at one point(!)

Over Christmas family friends tend to ask you what you’ve been up to recently and when I tell them I’m a Copywriter they tend to look at me blankly in the hope I continue to explain, which of course I do, probably too much (I mean come on… it’s me)

After my explanation finishes I see I’m quickly losing my audiences attention. So, I therefore continue with my next go-to spiel that consists of ‘it’s just a foot in the door job’ or ‘they’re a great company to work for and work my way up in’ or, my favourite one, ‘I want to be a writer so having my first grad job title as copywriter is pretty alright’.

And it is. I want nothing more than to say that writing is my profession. At the moment it’s my hobby – something I do because I love it that I eventually dream will turn into my career. 

And surely the start of a new year is the best time to engage the butt gears and get moving!

So…

After writing this (and the other posts I want to schedule) I will be applying for the some prestigious grad schemes, signing myself up for freelance job board ad websites things (I promise I know what I’m doing haha) and trying to get this ball rolling on what I call my future career. 

I know I’m just a graduate, but I was talking to an old friend yesterday and I heard myself saying that I didn’t want to lose sight of what I really want to do – now, I know I’m strong willed enough to ensure I keep myself on track… but if I don’t do enough to actually get myself there… well, no one else is gonna do it for me are they? 

(Also, cringe side note – thank you so much to everyone who follows, likes and comments on my post. I absolutely love and appreciate it all and can’t wait for what 2017 holds for this little blog)

London diaries | why do i have so much crap |

…and with a newly acquired New Look staff discount, the crap pile can only continue to grow upwards, oh what a shame.

In an attempt to ‘adult’ I’ve decided to budget (lolllll) my travel money into a different account to make it easier to work out how much I have left at the end of each month to chuck in my savings account (again, lollllll).

How well this will turn out, and how long I stick to said budgeting, is a complete mystery as I am a notorious shopping addict and lazy lazy cook. Especially now the vegan life has taken over, finding food on the go is proving rather difficult and usually more expensive, if you want something semi-healthy.

I’ve therefore taken to following a lot of vegan cooking insta accounts… however these just show all of the yummy cake-y treats that will, in no way shape or form, assist my Great South Run goal bod. But they’re pretty to look at and, on a day I finally get around to making any of them, will taste super good and be completely cruelty free.

Back to my crap pile. I was wandering round Home Sense today, my second fave shop behind the one and only Paperchase (obvy), and picked up this (slight delayed realisation after cradling it for 10 mins) pretty ugly jewellery stand. After swooning over rugs and cushions (see, the adult life is clearly also having an interior decorator vibe effect on me) I put it back in its rightful place and swiftly left the store, realising I should just wait and get the way prettier one I saw in New Look when my discount kicks in. See… I’m learning! Growth (Y)

Dad has also dropped the bomb that only 4/5 boxes will fit in the car, and seeing that my London room is like 2/3rd the size of my current one, this doesn’t fill me with joy. But I have been leaving clothes I haven’t (and probs will never again) worn in the wardrobe in favour of the clothes I actually like… anddddd the fact I need to make more space for all the new clothes (soz not soz) and cute homey roomy bits I’m gonna be buying.

Filming a moving out vlog which I will hopefully get edited and uploaded Saturday evening but I’ll attempt to take some Pinterest worthy pics of my new room for a blog post too :)

Anyway, Gilmore Girls are a callin ma name!

new job new city (new vlog)

I GOT A JOBBBBBB WOOOOOO YEYYYYYYYY EEEEEE!!! I’m going to be a Product Copywriter for New Look, based in Bermondsey and I’m buzzin’!

I had the interview at 9.. and they phoned me at 3 with the good news. Nearly cried on the phone to the recruitment guy and then had to keep pretty chill about the whole thing because I was at the pop-up shop and couldn’t run around screaming/telling anyone who would listen whether they wanted to or not.

The clothes at the pop up are amazing! Literally I want everything and I just wish I could afford it (all).

Room hunting however is proving more frustrating than trying to find a job… There are so many little specifications that I need – location, price, transport links, age of the people living there and all this other malarky that has to be considered before signing on the dotted line.

Stressssssss.

I did my usual thing of finding one that ticked maybe 2/3rds of the boxes, but it was in a quite industrialised area so didn’t feel very homey… but the house was so so pretty, so clean, so modern, small room but that doesn’t bother me. However, my mother, as per, was probably right in saying that if I’d gone for it I’d wanna move in a couple of months, but who knows! Got a few more lined up so something will hopefully capture my heart soon.
